Prior to this purchase, I would just guess a hot temperature to sear foods in after sous vide cooking. This always resulted in smoking oil (which loses nutritional values and leaves a bitter taste). When I tried this out I first tested the accuracy by measuring the water bath temperature shown in the picture, then I was able to adjust the heat on my cast iron grill pan until it was just barely below the smoke point of the oil I used. No smoking oil and a much better sear.
